I must first say that I have hated blackeyed peas since the first time I tasted them. I’ve tried them different ways, and always disliked them. But, my wonderful husband thinks they are yummy, so I bought a can and figured I’d try to dress them up…

In small sauce pan combine:

1 can Bushes Blackeyed Peas, undrained
1/3 C Chopped Onion (I used red onion)
1/4 C Real Bacon Bits
1/3 C Chopped Sundried Tomatoes

Simmer until tomatoes are soft and flavors are well blended.

Serve!

  1. i love black eyed peas, but can only eat them fresh! in the summer we got them every week from the farmers market for a month and my boys LOVED shelling them. man that was a good summer. black-eyed peas, cornbread and fried okra once a week. yum yum yum…
